Alcibiades I
Alcibiades is a rotating series of Imperial India Pale Ales. In each variation, we utilize the same malt bill but change the dry hop varieties. We save all of the hopping for the cold side of the brewing process, which results in the largest dry hop of all of our beers to date. This iteration was dry hopped with a substantial amount of Citra® hops from the United States and Riwaka™ hops from New Zealand. Crafted with American malted barley, malted red wheat, flaked white wheat, and our house ale yeast, this ale is complex, juicy, and incredibly drinkable. We taste notes of orange sorbet, gummy bears, mango gelato, and passion fruit. It is named after Alcibiades (450 - 404 BCE), who was an Athenian statesman and general. He was known for his extravagance and debauchery, leading him to be exiled from Athens twice and from Sparta once. In fact, the famous philosopher Socrates attempted to correct Alcibiades' behavior but was unable to do so!
Alexandros
Alexandros is one of our cross-continental IPAs. It is hopped generously with a blend of three hops: Nelson Sauvin™ from New Zealand, Vic Secret™ from Australia, and Simcoe® from the United States. Double dry hopped and crafted with American malted barley, specialty German and British malt, and our house ale yeast, this IPA is soft, juicy, and complex. We taste notes of mango sorbet, gummy bears, passion fruit, and pineapple. It is named after Alexander the Great (356 - 323 BCE), who was an ancient Greek king of Macedonia and known for his military genius. By the time he was thirty, he established one of the largest empires in history, stretching from Greece to India. He was also a student of the famous Greek philosopher, Aristotle!
Antinous
Antinous is one of our cross-continental IPAs. It is hopped generously with a blend of American and Australian hops, including Citra® and Galaxy®. Double dry hopped and crafted with German malted barley, specialty British malt, and our house ale yeast, this IPA is complex, juicy, and incredibly drinkable. We taste notes of pineapple, mango, orange sorbet, papaya, and light pine finish. It is named after Antinous (111 – 130 CE), who was a Greek youth and the lover of the Roman emperor Hadrian. Following his premature death, Antinous was deified by Hadrian, and he was worshipped in areas of the Roman west, such as Greece and Egypt. Due to his relationship with Hadrian, Antinous has become a symbol of homosexuality.

Notes of guava jam, passion fruit tart, and mimosas with a soft wheat finish. Named after the famous Roman epicure Marcus Gavius Apicius (1st century CE).

Arminius
Arminius is our robust porter. Crafted with British malted barley, a complex assortment of British and German specialty malts, classic American hops, and our ale yeast, it is bold, clean, and complex. We taste notes of dark chocolate fudge, chocolate covered espresso beans, caramel, and cacao powder. It is named after Arminius (18 BCE – 17 CE), who was a Germanic chieftain of the Cherusci tribe, and he is known for commanding the Germanic forces during the Massacre of Teutoburg Forest in 9 CE. This event was considered one of Rome’s greatest defeats, with three legions having been destroyed, and was the reason why Augustus exclaimed: “Varus, Varus, give me back my legions!”
Artemisia
Artemisia is one of our cross-continental IPAs. It is hopped generously with our hand-selected lot of both Citra® hops from the United States and Nectaron® hops from New Zealand. Crafted with American malted barley, white wheat, specialty British malt, and our house ale yeast, this ale is soft, complex, and refreshing. We taste notes of candy peach rings, passion fruit, orange sorbet, and lemon peel. It is named after Artemisia (lived ~480 BCE), who was the queen of Halicarnassus and an ally of the Persians during the second Persian invasion of Greece. She personally commanded five ships during the invasion and was known for her courage and wisdom.
Aurelia
Aurelia began as a normal batch of Balbilla, our flagship German Kölsch-style ale, which was brewed in the late Spring of 2024.After a two-month period of lagering in stainless, we transferred a small portion of Balbilla into freshly emptied Sauvignon Blanc French Oak barrels. After lagering at 2°C for just over two months in our cooler, it was transferred into our brite tank where it was slowly and gently carbonated.Following another few weeks of conditioning in stainless, the ale emerged softer and brighter than its original version.
This kölsch-style ale is named after Aurelia(120 – 54 BCE), who was the mother of Julius Caesar, a general and statesman during the late Roman Republic. Although little is known of her life, ancient historians have stated that she was highly regarded among the people in Rome due to her intelligence, diligence, and beauty. She was also praised for her upbringing of her son, Julius Caesar, by ensuring that he was properly educated as a child and teen.
Balbilla
Balbilla is our German Kölsch-style Ale. Crafted with German malted barley and wheat, a blend of classic and new German hops, and our favorite kölsch yeast, it is crisp, dry, and refreshing. Lagered for many weeks and naturally carbonated, we taste notes of candied lemon, blackberry, freshly baked bread, and crackers. It is named after Julia Balbilla (72 – after 130 CE), who was a Greco-Roman noblewoman and famous poet. She accompanied the emperor Hadrian on his tour of Egypt and several of her epigrams, which survive today, were inscribed on the Colossi of Memnon.
Berenice I
Berenice is our Czech-style Amber Lager. Crafted with Czech floor-malted barley, a select blend of specialty German malts, Czech hops, and our house lager yeast blend, it is balanced, clean, and soft. Lagered for many weeks and naturally carbonated, we taste notes of citrus, spice, bread crust, caramel, and crackers. It is named after Berenice I (340 – 279/268 BCE), who was the second Ptolemaic queen of Egypt. Her son, Ptolemy II, built a port on the Red Sea and named it after her.
Boadicea
Brewed with dark grade syrup from River’s Edge Sugar House in Ashford, CT and conditioned atop whole organic Honduras coffee beans roasted by our friends at Zero Prophet Coffee out of Washington, CT. Crafted with American malted barley, heaps of flaked oats, a complex assortment of German and British specialty malts, American hops, and our favorite American ale yeast. Conditioned in stainless steel for many weeks. Notes of chocolate covered maple candy, chocolate chip pancakes, dark chocolate covered espresso beans, cake batter, and dark roast coffee. Our staff also tastes maple covered dark cherry ice cream! Named after Boadicea (died around 61/60 CE), also known as Boudicca, who was queen of the Iceni in Britain and led an uprising against Rome. She most famously burned down the Roman city of Londinium (modern day London).

Brutus: DDH & Vanilla is a variation of our flagship IPA, Brutus. For this version of Brutus, we double dry hopped (DDH) it with a generous amount of Citra®, Simcoe®, and Mosaic® hops from the United States. We also conditioned it on a copious amount of Madagascar bourbon vanilla beans. Crafted with American malted barley, specialty German malts, a touch of flaked oats, and our house ale yeast, it is refreshing, juicy, and soft. We taste notes of orange creamsicle, mango gelato, mango lassi, and vanilla cream bars. It is named after Lucius Junius Brutus (6th century BCE), who was a famous founder of the Roman Republic after the expulsion of the last Roman king, Tarquinius Superbus.
Caesar
Caesar is an American India Pale Ale which incorporates various aspects of some of our core IPAs: the hop bill of Brutus, the malt bill of Alcibiades, and the hopping techniques of Cleopatra. This Imperial IPA received the largest hop charge for any of our beers, being hopped aggressively with three American hops: Simcoe® Cryo, Citra®, and Mosaic®. Crafted with American malted barley, specialty German malts, malted red wheat, flaked white wheat, and our house ale yeast, this ale is juicy, soft, and incredibly complex. We taste notes of mango gelato, blueberry taffy, orange sorbet, and candy peach rings. It is named after Gaius Julius Caesar (100 - 44 BCE), who was a Roman orator, statesman, author, and general. He expanded the territory of the Roman Republic by conquering Gaul (modern-day France and Belgium) and beginning the Roman conquest of Britain. He also started a period of civil wars which ultimately led to the downfall of the Roman Republic and the creation of the Roman Empire. He was named "Dictator for Life", which led to his assassination by political rivals in 44 BCE.
Caesarion
Crafted with European malted barley and spelt, a touch of specialty German malt, Czech Saaz hops, and our favorite farmhouse ale yeast. Step-mashed and naturally carbonated. Notes of candied lemon peel, white peppercorn, freshly baked bread, and a hint of grapefruit. It is named after Caesarion (47 - 30 BCE), who was the son of Cleopatra and Julius Caesar. He is known for being the last pharaoh of Ptolemaic Egypt and was executed by Octavian, who would later be known as Augustus, Rome's first emperor. Caesarion's name translates to "Little Caesar" in Greek!
Caligula
Caligula is one of our Wheat Cerealia™ Ales. Crafted with malted winter white wheat, Cascade hops from Smokedown Farm Hops in Sharon, CT, and our house mixed culture, it is soft, complex, and tart. Triple decocted and naturally carbonated, we taste notes of pear, blackberry, lemon/lime zest, sourdough bread, and cookie dough. It is named after Caligula (12 – 41 CE), who was Rome’s third emperor and known for his reign of tyranny. While hated by the senate, he was loved by the people of Rome due to the many public games he put on.
Caracalla
Crafted with American malted barley and white wheat, a touch of flaked oats, specialty German malts, and our house ale yeast, this IPA is soft, juicy, and balanced! It is hopped generously with a blend of American hops, including Citra® and Mosaic®. We taste notes of dank blueberry, candied orange peel, melon, and a hint of pine! It is named after Caracalla (188 - 217 CE), who was a member of the Severan dynasty, and is known for granting Roman citizenship to all people who lived within the Roman empire. His reign was also marked by domestic and foreign instability, which set the stage for the disastrous 3rd century in Roman history.

Commodus
Commodus is our flagship imperial stout. Crafted with American malted barley, a complex assortment of British and German specialty malts, classic American hops, and our ale yeast, it is soft, decadent, and complex. We taste notes of chocolate chip cookies, dark roast coffee, brownies, and cake batter. It is named after Commodus (161 – 192 CE), who was a Roman emperor and son to Marcus Aurelius. Cynisca
Crafted with German malted barley, a blend of classic and new German hops, and our house lager yeast blend, Cynisca is complex, soft, and balanced. Double-decocted, naturally carbonated, and lagered for over eight weeks, we taste notes of spice, candied lemon peel, honey, bread crust, and light caramel. It is named after Cynisca (born c. 442 BCE), who was a Spartan princess and was the first woman to enter the Olympic games. She won on two separate occasions for chariot racing (396 and 392 BCE), using horses which she bred and trained!
Daedalus
Daedalus is our Franconian-style Rotbier which was brewed together with our friends from Icarus Brewing in Lakewood, NJ. Crafted with German malted barley, specialty German malt, a blend of classic and new German hops, and our house lager yeast blend, this lager is soft, balanced, and complex. Double decocted, naturally carbonated, and lagered for over eight weeks, we taste notes of black currant, caramel, pastry crust, dark honey, and a clean finish. It is named after the Greek mythic figure, Daedalus, who was a brilliant inventor. While he is known for building the famous labyrinth on Crete for King Minos and the Minotaur, he is most famous for the wings he crafted for himself and his son, Icarus, to escape Crete. In the story, ignoring Daedalus’ warning, Icarus flew too close to the sun, which caused the wax on the wings to melt, sending Icarus into the sea where he drowned.
Domitianus
Domitianus is our Barleywine-style ale. Crafted with British pale malt, a touch of British crystal malt, British hops, and our ale yeast, it is bold, malty, and complex. Due to the many hours of boiling, there are complex flavors of raisin, prune, fig, dates, and dark brown sugar. It is named after Domitianus (51 – 96 CE), who was the last member of the Flavian dynasty. He is known for strengthening Rome’s borders, revaluing Rome’s coinage, and massive building projects in Rome. He was loved by the people and hated by the senate, leading to his assassination in 96 CE.
Elagabalus
Elagabalus is one of our Imperial Stouts agedin bourbon barrels. For this inaugural batch of Elagabalus, we selected asingle 10+ year Heaven Hill Barrel, which housed one of our several base stoutrecipes. The base beer, known to us as BS1, rested in oak for just over 16months. This singular barrel stood out among the others during our barrel sensory,demonstrating a harmonious balance between stout, oak, and bourbon. Craftedwith American malted barley, a complex assortment of German and British roastedmalts, heaps of flaked oats, classic American hops, and our ale yeast, thisstout is decadent, silky, and incredibly complex.
It is named after Elagabalus (204 – 222 CE),who was a member of the Severan dynasty and was known for religious and sexscandals during her reign; she replaced Zeus with Elagabal, who was anArab-Roman sun god, and married four women. She was also one of the firsttransgender people documented in history. We hope you enjoy this stout togetherwith those you love.
Eumachia
Crafted with 100% Vienna malt, a blend of noble hops, and our house lager yeast blend. Triple-decocted, naturally carbonated, and lagered for over eight weeks. Notes of bread crust, lemon peel, honey, and caramel. Named after Eumachia (lived around 1st century BCE), who was a priestess in Pompeii and well known for her funding of public buildings, such as temples. She used her wealth and notoriety to enter socio-political life in ancient Pompeii and is an extremely important figure in the history of women in Ancient Rome.
Faustina the Younger (2023 Vintage)
Faustina the Younger began as a normal batch of Sappho, our flagship German-style Helles Lager. In order to elevate the experience of our flagship single-decocted lager, we dry hopped it with our hand-selected Nectaron® hops from New Zealand. After a month of cold conditioning post dry hop, we transferred it to freshly emptied Sauvignon Blanc French Oak barrels. After lagering at 2°C for just over two months in our cooler, it was transferred into one of our lagering tanks where it was slowly and gently carbonated via kraüsen*. Following several more weeks of conditioning in stainless, the lager emerged softer and brighter than its original version. This lager is named after Faustina the Younger (130 – 175/6 CE), who was a Roman empress and wife to Marcus Aurelius. The senate awarded her the highest title for a woman in Rome, “Augusta”, due to her virtue as a wife. She also later received the title “Mater Castrorum” or “Mother of the Camp” because she travelled with her husband during his Germanic military campaigns. She was also the mother of the later Roman emperor, Commodus!
Gorgo
Gorgo is an Imperial India Pale Ale. Crafted with American malted barley and wheat, flaked oats, specialty German malts, and our house ale yeast, it is bold, complex, and decadent. Hopped generously with Citra® and Idaho 7®, we taste notes of rainbow stripe gum, overripe mango, papaya, and grapefruit. It is named after Gorgo (born 518 or 508 BCE), who was the queen of Sparta and wife of Leonidas. She is one of the few women mentioned by the ancient Greek writer Herodotus and is known for her wisdom and intelligence.
Hortensia
Hortensia is our Unfiltered Southern German-style Pilsner inspired by our travels in Bavaria, Germany. Hydna
Crafted with 100% Bohemian floor-malted pilsner malt, a blend of classic noble hops, and our house lager yeast blend. Double-decocted, naturally carbonated, and lagered for over eight weeks. Notes of candied lemon, honey, freshly baked bread, and crackers. Named after Hydna (lived around 480 BCE), who was an Ancient Greek swimmer. She is known for swimming over ten miles in order to sabotage the Persian fleet during the Persian invasion of Greece.
Julia Domna
Julia Domna began as a normal batch ofSappho, our flagship German-style Helles Lager. Building on our knowledge andinsights gained from Faustina the Younger, we decided to age a portion ofSappho in a single tawny port barrel from Portugal. Following a cold and slowprimary fermentation and a six-week lager period in stainless, we transferredSappho to the tawny port barrel. After lagering at 2°C for three months in ourcooler, it was transferred into one of our lagering tanks and blended withfresh, carbonated Sappho. Following another eight weeks of lagering, this lagerhas emerged soft, bright, and extremely complex. Julia Domna represents ourmission of pushing the boundaries of how lager beer can be brewed, fermented,and conditioned.
This lager is named after Julia Domna(160-217 CE), who was a Syrian-born Roman empress and wife to SeptimiusSeverus. She was awarded many titles during her lifetime, such as “Augusta”,“Mother of the Invincible Camps”, and “Mother of the Senate and of theFatherland”. It is believed that she received the most honorific titles of anyempress in the history of the Roman Empire. She was also the mother ofCaracalla!
Julia the Elder
Julia the Elder is our Italian-style Pilsner. Crafted with Italian malted barley, specialty German malt, a blend of German noble hops, and our house lager yeast blend, this lager is soft, complex, and bright. In the style of Italian pilsner, we dry hopped it gently with Hallertau Blanc hops from Germany. Single-decocted, naturally carbonated, and lagered for over eight weeks, we taste notes of Sauvignon blanc grapes, gooseberry, candied orange peel, and a light floral finish. It is named after Julia the Elder (39 BCE – 14 CE), who was the only daughter and biological child of the first Roman emperor, Augustus. While she is primarily known for being exiled by Augustus due to her promiscuous behavior, she was beloved by the people of Rome. She was witty, intelligent, and enjoyed reading and writing poetry.
Livia
Crafted with American malted barley and white wheat, flaked wheat, a touch of German specialty malt, and our house ale yeast. Hopped with Simcoe®, Mosaic®, and Cashmere. Notes of apricot, orange peel, cantaloupe, and juicy fruit gum. Named after Livia Drusilla (59 BCE – 29 CE), who was the wife of the first Roman emperor, Augustus, and was extremely influential in Roman politics. She was also known as Julia Augusta.
Marcus
Marcus is one of our flagship Cerealia™ Ales. Crafted with European malted barley and wheat, European noble hops, and our house mixed culture, it is tart, refreshing, and delicate. Conditioned for many months and naturally carbonated, we taste notes of apricot, peach, white wine, and raspberry. It is named after Marcus Aurelius (121-180 CE), who was the last of the “Five Good Emperors" during the Roman Empire. He is known for his Stoic philosophical text “Meditations”, which still influences and inspires people to this day.
Mitsy
Mitsy is a Triple India Pale Ale which is inspired by our other core offerings, notably Cleopatra and Brutus. For this IPA, we triple dry hopped it with a blend of American and New Zealand hop varieties, including Citra® and Nectaron®. The Nectaron® hops used are from our hand-selected lot from New Zealand. Crafted with American malted barley, New England malted white wheat, specialty British and German malts, and our house ale yeast, it is soft, juicy, and incredibly drinkable. It is named after Mitsy Mergy (2010 – 2023), who was a small yet fierce Yorkshire Terrier. Her loving spirit, bold personality, and unwavering loyalty will never be forgotten. She was the best dog a family could have.
Nero: Coconut & Vanilla
Nero is our rotating imperial milk stout series. For each variation, we utilize the same malt bill but condition the beer on different adjuncts. For this version, we conditioned it on an enormous amount of raw coconut flakes, toasted coconut flakes, and organic Madagascar bourbon vanilla beans. Crafted with American malted barley, a complex assortment of British and German specialty malts, American hops, and our favorite American ale yeast, this stout is decadent, soft, and creamy. We taste notes of coconut cookies, coconut crumb bars, chocolate chip pancakes, and a hint of dark roast coffee. It is named after Nero (37 - 68 CE), who was a Roman emperor and the last emperor in the Julio-Claudian dynasty established by Augustus. He is known for his debauchery, extravagance, and gluttony. There is a famous story of him playing the lyre while the city of Rome burned! While he is known for these vices, he took care of the people of Rome by building public baths, providing food, and by putting on various entertainment.

Ovidius is our fruited kettle sour series brewed with a touch of lactose*. This iteration was conditioned on massive amounts of blackberry, blueberry, and black currant purée. Crafted with American malted barley, malted oats, flaked oats, American hops, milk sugar, and our favorite Lactobacillus culture, this sour is soft, creamy, and tart. We taste notes of black currant jam, blueberry muffins, berry crumble, and mixed berry gelato. It is named after Ovidius (43 BCE - 17 CE), who was a Roman poet and lived during the reign of Augustus. He is most famous for his poem Metamorphoses, which is one of the most influential poems ever written, and he wrote a great many other poems, such as Ars Amatoria (The Art of Love) and Amores (The Loves). Ovid's collection of poems continue to influence writers, poets, and artists to this day. *note: contains lactose

Pericles
Imperial India Pale Ale inspired by our love of west coast hops and the mouthfeel of east coast IPAs. Crafted with American malted barley, specialty German malts. and our house ale yeast. Hopped generously with Chinook & Cascade from our friends at Smokedown Farm Hops in Sharon, CT, Simcoe®, and a touch of Columbus. Notes of pineapple, juicy fruit, papaya, mango, and pine. It is named after Pericles (495 - 429 BCE), who was an ancient Greek statesman, general, and orator. He is primarily responsible for the growth of Athenian democracy and establishment of the Athenian Empire.
Plotina: Nelson
Plotina is our rotating single-hop American Blonde Ale. For this version, we hopped it with Nelson Sauvin™ hops from Freestyle Hops in New Zealand. Crafted with German malted barley, American malted wheat, specialty British malt, and our house ale yeast, this ale is soft, complex, and incredibly drinkable. We taste notes of white wine, gummy bears, guava, passionfruit, and a light pine finish. It is named after Pompeia Plotina (died around 121/22 CE), who was the wife of the Roman emperor Trajan. She was awarded the highest title for a woman in Rome, "Augusta", due to her virtue, morality, and dignity. She was also interested in philosophy, particularly Epicureanism.
Sappho
Crafted with German pilsner malt, a blend of classic and new German hops, and our house lager yeast blend. Single-decocted and naturally carbonated. Notes of bread, crackers, candied lemon, and melon. Named after Sappho (~615 – 570 BCE), who was one of the most renowned ancient poets. She was even regarded as the tenth muse!
Seneca the Younger
Seneca the Younger is one of our Wheat Farmhouse Ales. We crafted it with 75% German malted wheat, 25% German malted barley, a touch of Tahoma hops from Smokedown Farm Hops in Sharon, CT, and our house mixed culture. Following a complex step mash schedule, we fermented and conditioned this ale in one of our American white oak foeders. After many months of conditioning in oak, it was bottled and naturally carbonated within the bottle over the course of several weeks. The beer that emerged is soft, delicate, and complex. We taste notes of candied lemon peel, blood orange, blackberry, and guava. It is named after Seneca the Younger (4 BCE – 65 CE), who was a Stoic philosopher, statesman, and playwright during the Roman Empire. His suicide under the order of Emperor Nero has been held as an example of calm in the face of adversity.
Vespasianus
Vespasianus is our Pale Lager which celebrates Connecticut ingredients. Crafted with malted barley and flaked corn from our friends at Thrall Family Malt in Windsor, CT, Cascade hops from our friends at Smokedown Farm Hops in Sharon, CT, and our house lager yeast blend, this lager is crisp, soft, and refreshing. Single decocted, naturally carbonated, and lagered for over eight weeks, we taste notes of candied lemon peel, crackers, grapefruit, and a light floral finish. It is named after Vespasianus (9 - 79 CE), who was a Roman Emperor and the founder of the Flavian dynasty. He was the first emperor from the equestrian class and gained prestige through his military success. He is known for starting the construction of the Flavian Amphitheater, which is known today as the Colosseum!
Vitellius
Crafted with German malted barley, specialty German malt, Hallertau Mittelfrüh hops, and our house kölsch yeast blend. Step-mashed, naturally carbonated, and lagered for six weeks. Notes of honey, spice, candied lemon peel, breadcrust, and caramel. It is named after Vitellius (15 – 69 CE), who was a Roman emperor during the year of the four emperors, which was a period of civil war during the Roman empire. During his short reign, Vitellius was known for his gluttony, and a recipe for stewed peas, known as Vitellian peas, has survived to this day!
Zenobia
Crafted with German malted wheat and barley, Hallertau Mittelfrüh hops, and our favorite Hefeweizen yeast strain. Double decocted and naturally carbonated. Notes of clove, banana, lemon, candied orange, and freshly baked bread. Named after Zenobia (240 - after 274 CE), who was queen of Palmyra in modern day Syria and known for her political ambition. She conquered several Roman provinces in the Roman east but was ultimately defeated by the Roman emperor Aurelian.
